# Ingredients:

→ Main Proteins

01 - 4 ribeye or NY strip steaks (1-inch thick)
02 - 2 tablespoons olive oil

→ Parmesan Crust

03 - 1 cup freshly grated parmesan cheese
04 - 3 cloves garlic, minced
05 - 1 teaspoon Italian seasoning

→ Seasonings

06 - Salt to taste
07 - Black pepper to taste

→ Finishing Touches

08 - 2 tablespoons fresh parsley, chopped

# Instructions:

01 - Take steaks out of fridge 30 minutes before cooking. Pat completely dry with paper towels and season generously with salt and pepper on both sides.
02 - In a bowl, combine grated parmesan with minced garlic and Italian seasoning. Mix well with hands to combine evenly.
03 - Heat cast-iron skillet over medium-high heat until smoking. Add olive oil and place steaks in pan. Don't move for 3-4 minutes until golden crust forms.
04 - Flip steaks and cook 2-3 minutes. Remove from heat and press parmesan mixture firmly onto top of each steak with spoon or hands.
05 - Transfer pan to preheated 425°F oven for 5-8 minutes until parmesan turns golden brown and bubbles around edges.
06 - Let steaks rest 5 minutes before slicing. Sprinkle with fresh parsley and serve immediately while crust is crispy.

# Notes:

01 - Don't skip the 30-minute rest at room temperature-I've learned cold steaks cook unevenly and the results are disappointing.
02 - Press the parmesan mixture firmly or it falls off during cooking, which I discovered through several failed attempts.
03 - Leftover parmesan mixture keeps in the fridge for a week and works great on chicken or vegetables too.
04 - Serve immediately while the crust is crispy-it's never quite the same once it cools down completely.

# Equipment Needed:

01 - Cast-iron skillet or oven-safe heavy pan
